Description
Soft boiled egg with spinach for a low carb healthy breakfast.
Ingredients
In a small saucepan, add about 1 – 1 1/2 Inches of water.
1 egg (keep refrigerated until you’re ready to use it)
1 cup of fresh spinach (stems removed)
1 tsp olive oil
1 tsp of fresh lemon
Salt and pepper to taste
Instructions
- In a saucepan add enough water to cover 1 egg (about 1 – 1 ½ Inches), bring water to a boil over high heat.
- Keep the egg chilled in the refrigerator until you are ready to put in the pan.
- Once the water is boiling, add egg, using a spoon to add the egg to the boiling water so it can glide in gently and not burn your hands.
- Turn the heat down to medium.

- While eggs are cooking, add clean spinach to your plate, drizzle with a little olive oil and squeeze of fresh lemon, sprinkle with salt.
- After 6 minutes, remove the egg from the pot using a large spoon, and place it in an ice water bath or run under cool water until it’s cool enough to handle but still warm.
- Peel, rinse and slice.
- Layer the slices on top of the spinach, sprinkle with a little salt and pepper and enjoy!
