Lemony Chicken, Brussels and Polenta

Citrus season comes just in time to refresh your spirits from the winter blues. If you’re like me and you love citrus, give this lemony chicken, brussels and polenta a try.  It’s so cheery, colorful, and loaded with protein, veggies and tangy lemon. The polenta gives you that soft warm texture that pulls all the flavors together. I like Bob’s Red Mill polenta, it’s organic, simple to make, and super tasty. Top the whole dish off with some spicy red pepper flakes and rich flavorful gorgonzola cheese, Yum!

The heartiness of this dish is so filling and satisfying, but you walk away from the table feeling good, like you’ve enjoyed a healthy meal. It’s perfect as a quick meal for yourself, for your family or a bright and cheerful for your guests. So this winter bring some love to your table and brighten up your day.

Preparations are simple just chop and cook, and your ready to go:

I definitely agree that it’s always good to eat as much fresh food as possible, but let’s face it, we’re all busy, so cut corners where you can. I suggest using a roasted chicken instead of cooking it yourself. If you know the food you’re buying is good quality, I say go for it. Simply cut it up your chicken breasts and add to your creation.

Lemony Chicken, Brussels and Polenta

Ingredients

Scale

1 leek cut in half, washed and sliced

Approximately 2 cups Brussels sprouts, quartered

3 cloves garlic, thinly sliced

2 roasted chicken breasts

2 tbsp olive oil

Salt and pepper to taste

1 tsp dried thyme.

1 tsp lemon zest

Juice of 1 whole lemon

Roasted pine nuts

Red pepper flakes


Instructions

  1. In a medium sized bowl add leeks, Brussels sprouts and 1 tbsp of olive oil, stir to saturate veggies
  2. Add 1 tbsp olive oil to skillet and warm.
  3. Add veggies to skillet, sauté. 
  4. Once cooked down and a little & browned (aprox 5 mins)
  5. Add Sliced garlic, sauté another couple of minutes. 
  6. Add chicken broth
  7. Add roasted chicken breast 
  8. Add juice of a whole lemon 
  9. Add lemon zest
  10. Add salt, pepper and thyme 
  11. Let simmer about 15min in broth.
  12. In the meantime make the polenta. Bob’s Red Mlll has the very best, It’s easy to cook and super tasty. Just follow package directions, takes about 5-7 mins.

To serve: 

  1. Ladle the chicken mixer over the polenta
  2. Garnish with Gorgonzola cheese 
  3. roasted pine nuts, (optional) 
  4. red pepper flakes, (optional, but if done lightly, it’s super tasty).
