Sweet Potato, Greens, and Ground Turkey Soup

In the realm of comfort foods, soup reigns supreme.

In a world filled with fast-paced living and processed convenience foods, there’s something deeply comforting about a homemade bowl of soup that nourishes both body and soul. This Sweet Potato, Greens, and Ground Turkey Soup offers a perfect balance of flavors, textures, and nutritional benefits, making it a wholesome delight for any occasion. So, the next time you crave a bowl of comfort, why not whip up a batch of this soul-warming soup and savor every spoonful? Your taste buds—and your body—will thank you for it!

Let me walk you through how I throw this cozy soup together.

Gather Ingredients:

First off, I gather my ingredients. Sweet potatoes, a bunch of fresh greens (usually kale or spinach), and ground turkey. Oh, and don’t forget the onions, garlic, broth, and seasonings.

Secondly, I begin by peeling and dicing the sweet potatoes and chopping the onions and garlic. I add the sweet potatoes to a small sauce pan with vegetable broth, some salt, and ground nutmeg.

Thirdly, while the sweet potatoes are simmering, I add onions and garlic to a large pot and sauté them in a bit of olive oil until they’re nice and fragrant. Then, I add in the ground turkey, and seasonings and cook it until it’s browned. Next, I add the chicken broth and pour in the diced sweet potatoes and the vegetable broth and let it simmer.

Lastly, when the sweet potatoes are just about tender, I toss in the greens and tomatoes. Letting the greens wilt down into the soup, simmering for a few minutes longer to let all the flavors meld together.

Ready to eat:

And that’s it! A hearty, nutritious soup that’s perfect for warming you up on a cold day. I like to serve it with a chunk of warm crusty bread for dipping. This soup is a great way to sneak some extra veggies into your diet. So next time you’re craving something cozy and comforting, give this sweet potato, greens, and ground turkey soup a try. I promise you won’t be disappointed!
