Pasta with Sausage

Week night Pasta with sausage that makes dinner super tasty, but quick and easy.

Making this easy week night pasta with sausage is a breeze. Especially if you have the ingredients already prepared. When I make Springtime Quiche, I cook the whole pound of sausage, knowing I don’t need it all but, I could use it in another dish later in the week. It turned out great! And it’s a super quick way to get a meal on the table, and using the right sauce makes it super tasty. I love Carbone pasta sauce. When I make this pasta, I like to use their Arrabbiata sauce, it’s spicy but it has just the right amount of heat. Even my husband, who doesn’t like anything too spicy (he gets the hiccups) loves this sauce.

Week night pasta with sausage and spicy sauce.


Ingredients

Scale

1 shallot, finely chopped

1 clove of garlic, finely chopped

To make it even quicker, you can skip the onion and garlic, the sauce has plenty of flavor, I do it to flavor to the sausage and skillet)

1 Tbsp Olive Oil

Remaining 10 ounces of sausage

One jar of Carbone Arrabbiata Sauce (I love this sauce, it’s just the right amount of spice and loaded with so much flavor).

1/2 a pkg or about 1 1/4- 1 1/2 cups of dry pasta, (your choice of pasta type)


Instructions

In a large skillet, over medium heat add olive oil

Add onion and garlic (To make it even quicker, you can skip this step, the sauce has plenty of flavor, I do it to flavor the sausage and skillet)

Sautè about 2 mins

Add cooked sausage, working the onion and garlic into the sausage. aprox 4-5 mins

Add entire jar of Carbone sauce

Let simmer over low heat, letting all the flavors melt together.

 

In the meantime, bring a pot of water to a boil, it’s time to cook the pasta. 

Once it’s boiling add salt, aprox. a tbsp.

Add pasta and cook according to package directions for al dente. (I live in a higher altitude so you need to cook pasta 2-3 minutes longer than instructions say, so keep that in mind if you live in a higher altitude).

Once it’s finished cooking, scoop out  about 1/2 a cup of the salty, starchy pasta water and set it aside.

Drain the rest of the pasta

Add pasta and salty, starchy water to the sauce.

Stir it together to flavor all the pasta, serve.

I like to top it off with some grated parmesan and fresh basil.
