Bacon Wrapped Scallops

Ingredients

Scale

1 lb of uncooked bacon

1 lb of small to Medium Scallops

Italian bread crumbs, in a shallow bowl

Cream cheese (Philadelphia Cream Cheese)

Fresh chives


Instructions

  1. Foil lined cookie sheet, or parchment paper with bacon wrapped scallop on its end.
  2. Preheat oven to 375°
  3. Lay bacon out on a large cutting board.
  4. Smear a dollop of cream cheese to the inside of bacon
  5. Add fresh chives
  6. Roll each scallop in bread crumbs, setting each in a different piece of bacon.
  7. Begin to roll until the scallop is fully wrapped at least 1 1/2 times around.
  8. Cut remaining bacon off.
  9. Rolled Scallops should hold together with the cream cheese but you can also add an ovenproof  toothpick.
  10. Add each wrapped scallop to the lined cookie sheet.
  11. Place in oven
  12. Cook for 15- 20 minutes

* (Try blending the cream cheese with chives in a food processor, then smear on bacon)
