Ingredients

1 lb of uncooked bacon
1 lb of small to Medium Scallops
Italian bread crumbs, in a shallow bowl
Cream cheese (Philadelphia Cream Cheese)
Fresh chives
Instructions
- Foil lined cookie sheet, or parchment paper with bacon wrapped scallop on its end.
- Preheat oven to 375°
- Lay bacon out on a large cutting board.
- Smear a dollop of cream cheese to the inside of bacon
- Add fresh chives
- Roll each scallop in bread crumbs, setting each in a different piece of bacon.
- Begin to roll until the scallop is fully wrapped at least 1 1/2 times around.
- Cut remaining bacon off.
- Rolled Scallops should hold together with the cream cheese but you can also add an ovenproof toothpick.
- Add each wrapped scallop to the lined cookie sheet.
- Place in oven
- Cook for 15- 20 minutes

* (Try blending the cream cheese with chives in a food processor, then smear on bacon)
