Banana Nut Muffins

What I do when I have three very ripe bananas? Make banana nut muffins!

As a child I never cared for bananas, but banana bread was a very different story. I loved banana bread. Fresh out of the oven, warm with butter, oh goodness I can taste it now. Yum! I believe this to be my grandmother’s very delicious recipe. 

The aroma of banana nut muffins filled the kitchen as they baked in the oven. I couldn’t help but smile as I anticipated the moment when I could finally indulge in these delicious treats.

As the timer ticked down, I watched through the oven window, eagerly awaiting the muffins to rise and turn a beautiful golden brown. The scent grew stronger, and my mouth watered with each passing second.

When the timer finally went off, I carefully removed the muffins from the oven. They were perfect – slightly crispy on the outside, yet moist and full of flavor on the inside. I couldn’t resist breaking one open while it was still warm, and the steam escaped, revealing the soft banana chunks and crunchy pecans.

I grabbed a plate, placed a muffin on it, and took a moment to appreciate the swirls of golden-brown muffin top and the nutty aroma that filled the air. Then, with anticipation building, I took my first bite. The combination of ripe banana, crunchy nuts, and sweet, moist muffin was heavenly.

With each bite, I savored the delightful blend of flavors and textures. It was the perfect reward for taking those three very ripe bananas and turning them into something so delicious. I knew that these banana nut muffins wouldn’t last long in my kitchen, and I was perfectly fine with that.

Banana Nut Muffins

Ingredients

3/4 cup of butter (1 1/2 sticks)

1 1/2 cups sugar

3 mashed bananas

2 eggs well beaten

1 tsp vanilla

2 cups flour

1 tsp soda

3/4 tsp salt

1/2 cup buttermilk

3/4 cups pecans


Instructions

  1. Preheat oven to 325°
  2. Cream together butter and sugar. 
  3. Blend in banana’s, eggs, and vanilla.
  4. In a separate bowl, mix flour, soda, and salt. 
  5. Add flour mix to banana mixture alternating with buttermilk. Continue to blend as you add these ingredients, add nuts.
  6. Pour into greased and floured muffin tins and bake for 30 mins.
