I recently whipped up a Cantaloupe, Cucumber, and Mint Salad that I can’t stop thinking about. Cantaloupe, Cucumber, and Mint Salad

Refreshing beautiful summer salad with loads of flavor and texture.


Ingredients

Units Scale

1 small Cantaloupe
1 cucumber or 2 smaller ones
1/4 of purple onion
1/4 cup of chunked feta
810 fresh mint leaves cut in ribbons

Dressing:
1/4 cup olive oil,
2 tbs red wine vinegar,
salt and pepper.


Instructions

  1. Cut Cantaloupe into bite sized pieces
  2. Cut Cucumber into similar bite sized pieces
  3. Cut Purple onion in long thin slices
  4. Cut Feta into small chucks or use already crumbled feta
  5. Stack all mint leaves together, roll them long wise, and slice into strips
  6. Add all to a large serving bowl
  7. Stir in dressing
  8. Serve

Notes

Holds up well over night, so feel free to make it a day ahead of your picnic or dinner party.
