Refreshing beautiful summer salad with loads of flavor and texture.
Ingredients

1 small Cantaloupe
1 cucumber or 2 smaller ones
1/4 of purple onion
1/4 cup of chunked feta
8–10 fresh mint leaves cut in ribbons
Dressing:
1/4 cup olive oil,
2 tbs red wine vinegar,
salt and pepper.
Instructions
- Cut Cantaloupe into bite sized pieces
- Cut Cucumber into similar bite sized pieces
- Cut Purple onion in long thin slices
- Cut Feta into small chucks or use already crumbled feta
- Stack all mint leaves together, roll them long wise, and slice into strips
- Add all to a large serving bowl
- Stir in dressing
- Serve
Notes
Holds up well over night, so feel free to make it a day ahead of your picnic or dinner party.
