Ingredients
Salad:
2 cups mixed baby greens
1 apple, cut into chunks
1/2 cup of blueberries
2 stalks of sliced green onions
2 Tbsp celery, sliced
1–2 tsp of fresh dill
1/4 cup feta ( I love Odessey feta cheese, it comes as a block in brine and I can cut it up in small chunks and use as much as I want. It’s full of that salty, creamy goodness that we love about feta.
1 Tbsp toasted sliced almonds (I buy them toasted)
Dressing:
1/4 cup MCT oil, grape seed oil, or liquid coconut oil.
2 Tbsp white balsamic vinegar
1/2 lemon, juiced
Salad Dressing Seasoning, by Litehouse (I think they have the best freeze dried seasoning and I keep a stash at all times.)
Salt and pepper
Instructions
Toss together veggies and fruit, top with Feta, toasted almonds, dill, and serve.

It’s a great addition to any brunch, and a way to get your fruit and veggies mingling together.
