Description
Tasty homemade granola
Ingredients
Scale
5 cups old-fashioned oats
1 cup sliced almonds
1 cup chopped pecans
1/2 cup pepitas seeds
1 Tbsp – ground chia seeds
2 Tbsp – ground flax seed.
1/2 cup packed light brown sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup coconut oil (use any vegetable oil you like but I would avoid olive oil)
1/3 cup honey
1 teaspoon vanilla
1/2 – 1 cup coconut flakes (optional – you can certainly add any dried fruit you like)
Instructions
- Preheat the oven to 300 degrees F.
- In a large bowl, mix the oats, nuts, ground seeds, brown sugar, salt and cinnamon.
- In a saucepan, heat the oil and honey, don’t let it come to a boil.
- Whisk in vanilla.
- Pour the liquid over the oat mixture. Stir ingredients together.
- Spread granola in a 15×10 inch baking pan or cookie sheet.
- Bake for 25-30 minutes.
- Put granola back in the bowl you mixed it in and add the coconut.
- Allow to cool then put the granola to airtight containers, (I use mason jars).
- Store them in the freezer.
Notes
Enjoy with yogurt, over ice cream or eat by the handful as a snack.
