Filling:
6 peaches, peeled and sliced
2 cups blackberries
1/2 cup granulated sugar
2 Tbs lemon juice
Crisp topping:
1 1/2 cups rolled oats
1 cup flour
1 cup brown sugar
1/2 tsp salt
1 tsp cinnamon
1 stick + 1/2 stick of cold unsalted butter (3/4 cup
Instructions
- Preheat oven to 375 degrees F
- In a large bowl, gentle toss peaches, blackberries, sugar and lemon juice.
- Slide peaches and berries into a 8×11 baking dish.
(you can also make this in a 9×13 baking dish, serves more people and is a bit more crisp per bite) - In a separate bowl, mix together oats, flour, brown sugar, salt and cinnamon.
- Add cold butter (you can let it warm a bit to make it easier to squish together but not to room temperature), using your hands, fork or pastry cutter, squeeze the butter and the dry ingredients together to create the crumble.
- Layer the crumble on top of the peaches and blackberries in the baking dish.
- Bake for 50-60 mins.
- Let cool about 30 mins or so. (I never make it that long, just always smells so good).
