Description
The delicate yet versatile Peach Salsa. It’s will enhance any meal.
Ingredients
Salsa
3 ripe peaches, peeled, pitted, and finely diced
1/4 cup red onion, finely chopped
1/4 cup green onions
1 jalapeño pepper, seeds removed and finely chopped
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Dressing
Juice of 1 lime
1/2 – 1 teaspoon honey (adjust to taste)
1/8 teaspoon ground ginger (I use, trust and like, Simply Organic)
1/8 teaspoon ground cumin
Dash of salt
Instructions
- In a mixing bowl, combine the chopped peaches, jalapeño, purple onion, green onions, and cilantro. Mix gently to combine the ingredients evenly.
- In a separate small bowl, whisk together the lime juice, honey, ground ginger, and ground cumin. Taste the dressing and adjust the sweetness or spiciness by adding more honey or spices if needed.
- Pour the dressing over the peach mixture. Toss gently to coat the ingredients evenly with the dressing. Make sure the salsa is well combined with the dressing.
- Allow the salsa to chill in the refrigerator for at least 30 minutes before serving. Chilling helps the flavors meld together and enhances the taste of the salsa.
- Once the salsa is chilled and the flavors have melded, give it a final stir. Serve the peach salsa alongside your fish taco bites. It also goes well with grilled fish, chicken, or as a refreshing dip with tortilla chips.
