1/4 cup – purple onion – chopped
1 jalapeño – chopped (seed and veins removed to reduce heat)
30–35 – grape tomatoes cut in half or quartered depending on the size of the tomatoes
1/4 cup of cilantro
salt and pepper
1/2 of a fresh lime, juiced
Instructions
- In a medium sized bowl add purple onion, jalapeño, tomatoes, salt, lime juice, and fresh cilantro.
- Stir all ingredients together and enjoy.
Notes
Try it on anything: tacos, eggs, rice, fish. It’s an absolute favorite and a staple in our fridge.
