Roast Rainbow Cauliflower

Beautiful and colorful side dish, with a deep rich flavor.


Ingredients

Scale

1/2 head of gold cauliflower, cut into bite size slices

1/2 head of purple cauliflower, cut into bite size slices

1/2 head of Romanesco (bright green) broccoli/cauliflower, cut into bite size slices

1 tbsp Olive oil

2 cloves garlic, sliced very thin

Salt and pepper to taste

1/41/2 cup of Romano / Parmesan cheese

12 tsp lemon zest

1 tsp dried parsley


Instructions

  1. Preheat oven to 425°
  2. Using a cookie sheet, cover with parchment paper
  3. Add all the sliced cauliflower.
  4. Drizzle olive oil over the top of cauliflower and work it around with your hands.
  5. Add salt and pepper.
  6. Add sliced garlic.
  7. Add lemon zest.
  8. Add cheese.
  9. Sprinkle with dried parsley.
  10. Put cookie sheet in oven
  11. Let cook for 20-25 mins.

 


Notes

Remember, when choosing to make this recipe the exact color or ingredients are up to you. If you can’t find gold or purple cauliflower use white, still super tasty. If you don’t like garlic, skip it or try another ingredient.
