Soft boiled egg with spinach

  • Author: Myndi

Description

Soft boiled egg with spinach for a low carb healthy breakfast.

Ingredients

Scale

In a small saucepan, add about 1 – 1 1/2 Inches of water.

1 egg (keep refrigerated until you’re ready to use it)

1 cup of fresh spinach (stems removed)

1 tsp olive oil

1 tsp of fresh lemon

Salt and pepper to taste

Instructions

  1. In a saucepan add enough water to cover 1 egg (about 1 – 1 ½ Inches), bring water to a boil over high heat.
  2. Keep the egg chilled in the refrigerator until you are ready to put in the pan.
  3. Once the water is boiling, add egg, using a spoon to add the egg to the boiling water so it can glide in gently and not burn your hands.
  4. Turn the heat down to medium.
  5. Put the lid on and let it continue to boil for 6 minutes. *If you like your eggs a bit more done you can cook them for up to 10 minutes but no longer. (See https://www.budgetbytes.com/make-soft-boiled-eggs/  for a chart of how long to cook eggs for desired texture, I find this chart very helpful.
  6. While eggs are cooking, add clean spinach to your plate, drizzle with a little olive oil and squeeze of fresh lemon, sprinkle with salt.
  7. After 6 minutes, remove the egg from the pot using a large spoon, and place it in an ice water bath or run under cool water until it’s cool enough to handle but still warm.
  8. Peel, rinse and slice.
  9. Layer the slices on top of the spinach, sprinkle with a little salt and pepper and enjoy!
