This delightful concoction marries the earthy sweetness of sweet potatoes with the vibrant flavors of leafy greens and the savory richness of ground turkey, offering warmth, nourishment, and comfort.
Ingredients

3 small/medium sized sweet potato, peeled and cubed
1 medium yellow or white onion, chopped
3 cloves of garlic, chopped fine
1 lb. ground turkey
8–10 grape tomatoes, cut in half
2–3 cups of fresh spinach, kale, or super greens
32 oz (4 cups) vegetable broth (Pacific brand, it’s organic and delicious)
16 oz (2 cups) chicken broth (Pacific brand it’s organic and delicious)
2 tsp Thyme
1 tsp salt
1/2 tsp pepper (to taste)
1/2 tsp of cumin
1/4 tsp of nutmeg
1 Tbsp olive oil
Instructions
- In a medium sauce pan, add veggie broth, salt, and nutmeg, bring to a boil.
- Add sweet potatoes and cook for about 10 minutes.
- In a large pot add olive oil and heat.
- Add chopped onions and sauté 3-4 minutes, just before they are translucent.
- Add garlic, continue to cook 1-2 minutes.
- Put onions and garlic in a small bowl and set aside, or push them to the edges of the pot.
- In the large pot you cooked the onions and garlic, add ground turkey and all the seasoning (except nutmeg).
- Stir and brown turkey, leaving meat chunky.
- Once the turkey is cooked through, add onions and garlic back to pot, or stir in.
- Add approximately 1/2 box (16oz) of chicken broth, bring to a boil.
- Add the sweet potatoes and veggie broth to the large pot.
- Continue cooking till potatoes are nearly soft.
- Add tomatoes and spinach cook 3-5 minutes (It will look like you’re adding too much greens but they cook down a lot, so hang tight).
