Ingredients
Scale
3 stalks of green onions, chopped
2 stalks of celery, chopped
1 zucchini or 1 Cup, diced
2 cups grape tomatoes, cut in half
1 cup green olives
Feta cheese (Odssey)
Coarse salt
Black pepper
1/4 tsp greek seasoning or dried oregano
Dressing
1/4 cup Extra Virgin olive oil
Juice of half a fresh squeezed lemon
1/4 cup of white balsamic vinegar
Toppings
1/3 cup cooked crumbled bacon
Balsamic glaze
Sliced fresh basil and parsley
Instructions
- In a large mixing bowl, add vegetables: chopped green onions, celery, diced zucchini, halved grape tomatoes, and green olives.
- Shake dressing well, pour over salad and stir, to add a refreshing citrusy flavor.
- Season the salad with coarse salt, freshly ground black pepper, and Greek seasoning (or dried oregano). Adjust the seasonings to taste.
- Add the crumbled feta cheese
- Gently toss all the ingredients together to combine the flavors.
- Top the salad with crumbled bacon, drizzle of balsamic glaze and sliced fresh parsley and basil
