This Week Night salad is made with spinach, green onion, tomato, and bacon, a few of the ingredients from making Springtime Quiche.
I make lots of salad and usually they are filled with items I already have. This week night salad is loaded with some of the ingredients I used to make the Springtime Quiche. Plus I added a few additional ingredients that I found in the fridge. I love to start with a bed of mixed greens and Revol Greens is one of my favorites. They are organic, pre-washed, and always fresh.

Ingredients
Start with the Spinach left from making the quiche
Add some mixed greens, I like Revol Greens they are organic and always fresh
1–2 tbsp remaining green onions, chopped
1/2 cup remaining grape tomatoes, sliced
1/3 cup remaining Bacon
1/3 cup Cucumber
1/4 cup Olives
1/4 cup Bell pepper, chopped (any color)
1/4 cup Raddishes

Instructions
Assemble salad and Toss with any dressing you like. I prefer a vinaigrette, with red wine vinegar or balsamic vinegar. Or have each person serve their portion of salad, offer a few different dressing, so each person can use what they would like.
