Fresh, bright, and delicious summer salad. 


Ingredients

Scale

2 cups – Yellow & orange grape tomatoes, cut in half

1/4 cup– Purple onion, chopped

1/2 red bell pepper, chopped

1 cucumber, chopped

Dressing:

juice of one lemon

1 Tbsp – olive oil

Top with:

Salt & Pepper

2 Tbsp fresh dill


Instructions

Instructions: 

  1. In a large bowl add all chopped veggies, and tomatoes. (if you’re using cherry tomatoes, cut them into quarters). 
  2. Add dressing, salt, pepper and dill.
  3. Stir and serve.
